2012 Notary Public Cabernet Sauvignon, 

Happy Canyon of Santa Barbara 

 

The Happy Canyon of Santa Barbara AVA lies at the Eastern end of Santa Ynez Valley. The combination of rocky mineral rich soil and the large temperature swing between day and night yield wine with ripe flavors, textured tannins and fresh acidity.

 

The selected blocks were hand harvested, destemmed and left to soak for five days. Maceration on the skins lasted 20 days. The wine was aged in a combination of neutral and New French oak for 18 month.  No fining or filtration was done before bottling.

2014 Notary Public Cabernet Sauvignon,

Santa Ynez Valley

 

Our Santa Ynez Valley Cabernet Sauvignon comes from select vineyards with the pedigree to produce fruit with exceptional balance and depth.

 

All the fruit was picked in the early morning hours, destemmed and left to cold soak for three to five days. Maceration on the skins lasted between 14 and 21 days after which the wines were pressed to tank and transferred to barrel for aging. All vineyards we vinified separate. The wines were aged in mostly neutral oak for 18 months. No fining or filtration were done before bottling.

2014 Notary White Wine, Santa Ynez Valley

 

Our 2014 Notary White is a blend of 58% Sauvignon Blanc and 42 % Chenin Blanc. In Santa Ynez Valley these two varietals thrive under the growing conditions. The wines were fermented in a combination of 600L barrels(Demi Muid) and stainless steel tanks. All the wines were aged separate for 8 months on the lees with minimal stirring to preserve freshness and CO2. The Sauvignon Blanc gives the wine freshness and bright fruit, while the Chenin lends texture and structure to the blend.

 

Stone fruit and citrus dominate the nose with hints of fresh pineapple. The palate is refreshing with quenching citrus and mineral flavors. Everything is held together with a firm and refreshing acidity. This wine screams warm summer days and light fare.
